I was a little skeptical...I'm loving our plan! I was a little skeptical the day I brought home 48 chicken breasts and 3 giant packs of steak from Sam's Club. My counter looked like yours. It looked like I was about to open up my own little grocery store. :o) But... once I got into it... it went so fast. <br /><br />I cooked two things one night.... The Chicken Divan and Beef Fajitas... so we could have one for dinner and the other one could marinate for the next night. Maybe about 3 hours total to prep and cook. The pesto butter chicken breasts took the most time... they were more tedious and required their own afternoon for cooking.... about 3 hours. <br /><br />And now... I'm LOVING this plan! It's been so fun to just pull something out of the freezer the night before to let it thaw... then no worries about dinner each night. And, my grocery bill has been so much lower! All I've really needed to add is salad and vegetables. <br /><br /><br />By the way... We LOVED your rio grande taco meat and lasagna! All three kids even loved them! We haven't made it to the third one yet. <br /><br />We all should get back together on this and talk through how things are going. My only suggestion is that we might think about dividing the meals into two halves next time. I've been partially thawing each thing, dividing it in half and tucking one half back into the freezer. Our family of five really only eats half of one of those big casserole pans. (Plus.. you know how John feels about leftovers! ha ha!) And... the great thing about halving them is... I basically have 30 meals instead of 15!! Bonus!! :o) All for about 6 hours of cooking on my end! I would definitely do this again. Losing my grandpa really was the marker that set-off my sorrow. i had a very traumatic delivery of Shelby and w/ the 2 years of infertility and all those struggles, it was my breaking point losing him. I loved spending 1 day a month making his food and then freezing them. Our girl...Hi Katie!<br />These meals look so yummy :-) <br />Our girls youth group does this on occasion and they keep a freezer stocked at church so we can take meals to families who have needs....surgery, new baby, etc. <br /><br />I remember getting into the cooking rut as the kids were starting to eat table food. I really wanted them to develop a broad palate, but every night seemed to be a last-minute meal that was becoming more and more processed and blah. I started making a weekly menu on the weekend for the week ahead. Each weeknight was a different meat...chicken/beef/fish/pork and pasta. I picked about 4 different meals for each one and I rotate them through the month so we don't get hamburger helper every Wednesday night :-) Making the menu also helped me to know what ingredients I'd need for the week, so I wasn't unprepared when <br />4PM rolled around and I realized I didn't have an onion or enough chicken breasts. It's been a great help in avoiding the take-out and fast-food rut, too, and the kids are really doing well with eating (or at least trying) new foods.
